Xiamen

Xiamen (xià mén 厦门) is the second largest city in Fujian. Legend has it that egrets once made home there, hence its another name of "Egrets' Island (lù dǎo 鹭岛)". The city is 1,516.12 square kilometers in area and has a population of 1.17 million. The best tourist season lasts from April through to November. Xiamen and its surrounding countryside offer spectacular scenery and pleasant tree-lined beaches. Xiamen serves as a principal entry and exit for overseas Chinese to and from China and an ancestral home of many people in Taiwan (tái wān 台湾).

Fujian cuisine (fú jiàn cài 福建菜) was a latecomer in southeast China along the coast. The cuisine emphasizes seafood, river fish, and shrimp. It is known for its meticulous ingredient selection, fine cutting, and fresh taste. The local cooks are good at preparing seafood, and the dishes they cook are tender, tasteful but not oily and look elegant. Generally speaking, Fujian dishes are slightly sweet and sour, and less salty, and often use the red distiller's grain for flavoring.
